Classic Peanut Butter Cookies

Soft and chewy cookies with tons of peanut butter flavor. Classic peanut butter cookies are one of my favorite cookie flavors. They are great to make for the holiday baking season. These classic cookies are so delicious and easy to make. Everyone will love these classic cookies with the traditional peanut butter criss cross pattern.
The dry ingredients are whisked together first, then the softened butter is beat with peanut butter and both brown sugar and granulated sugar. Eggs and vanilla are added to the cookie dough until smooth. Add the dry ingredients into the wet ingredients in three separate additions, beating after each until all of the ingredients are combined. Refrigerate the dough for at least one hour. Refrigerating the cookie dough before baking makes keeps the cookies from spreading out too much in the oven. Roll the chilled cookie dough into balls and place onto ungreased baking sheets spaced two inches apart. To make the traditional peanut butter criss cross pattern on the cookies, press a fork into each cookie both sides. Bake until the cookies are lightly browned. Let cool completely on a wire rack.

Classic Peanut Butter Cookies

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup butter, softened
  • 1 cup peanut butter
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

  • In a medium bowl, whisk together flour, salt and baking soda. In a large bowl with either a hand or stand mixer, beat softened butter with peanut butter and both granulated and brown sugar until fluffy.
  • Add in eggs and vanilla extract and beat until smooth. Add the flour mixture into the wet ingredients in three separate additions. Beating after each addition until fully incorporated.
  • Cover and refrigerate for at least one hour. Preheat oven to 350 F. Roll cookie dough into balls and place onto large ungreased baking sheets. Bake for 10-12 minutes.
