Classic Beef Enchiladas

Classic ground beef enchiladas make a quick and easy weeknight meal that the whole family will love. Covered with cheese and filled with a spicy ground beef filling. It only takes a few minutes to put these enchiladas together,  for a simple and delicious meal. Serve with a side of rice and your favorite tortilla chips and hot sauce or guacamole.

The ground beef is browned in a large skillet over medium heat, breaking the meat up with a spatula as it cooks. Drain the grease and add in the seasoning, salsa, and water. Let the mixture simmer for another 5 minutes, or until thickened. Evenly divide the meat mixture between the flour tortillas, and top with some of the cheddar cheese. Roll up tighlty and place into a baking dish lightly covered with enchilada sauce. Pour the remaining enchilada sauce on top and top with shredded cheddar cheese. Bake until the cheese has fully melted.

Ingredients
  

  • 1 pound ground beef
  • 1 ( 1 oz.) packet taco seasoning
  • 1/2 cup salsa
  • 1/2 cup water
  • 8 flour tortillas
  • 1 ( 15 oz.) can red enchilada sauce
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. Brown ground beef in a large skillet over medium heat, breaking it up with a spatula as it cooks until no longer pink, drain grease.
  • Add in taco seasoning, salsa, and water. Let simmer for another 5 minutes. Pour a thin layer of enchilada sauce in the bottom of a greased baking sheet. Place meat mixture into each tortilla, followed by a tablespoon of cheese. Roll up tightly.
  • Place filled enchiladas in baking dish. Cover with the remaining enchilada sauce and cheese. Bake for 25-30 minutes.
