Soft and chewy sugar cookie bars filled with Christmas-themed sprinkles. These delicious chewy cookie bars are quick and easy to make. It is made like a sugar cookie dough, but filled with Christmas-themed sprinkles. They are a sweet and delicious way to have all of your favorite cookie flavors, but made easier in bar form. There is no need to chill the dough or roll the into balls. The cookie dough is pressed into a baking dish, and cut into bars after they have baked.

The dough for these cookie bars is made like a sugar cookie dough, except with the addition of Christmas-themed sprinkles. The dough is pressed into an 8-inch square baking dish, and baked until the center of the cookie bars comes out clean with a toothpick. Let cool completely before cutting into bars and serving.

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Christmas sprinkles

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda.
  • In a large bowl, combine softened butter with sugar until fluffy. Add in egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, and mix until a thick dough forms. Fold in sprinkles. Press the cookie dough into a greased square baking dish.
  • Bake for 20-25 minutes. Cut into bars.
