The cookie dough is made by mixing chocolate cake mix with eggs and vegetable oil until smooth. Place the cookie dough onto a large ungreased baking sheet and bake until they are fully cooked through. Remove from the oven and let cool completely. Place ice cream onto half of the cookies and sandwich with the remaining half. Store in the freezer until serving.

Ingredients
- 1 ( 15 oz.) box chocolate cake mix
- 2 large eggs
- 1/2 cup vegetable oil
- vanilla ice cream
Instructions
- Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, and vegetable oil until smooth. Use a cookie scoop to place the cookies onto a large ungreased baking sheet at least 2-inches apart.
- Bake for 10-12 minutes. Let cool completely. Place ice cream onto half of the cookies and sandwich with the remaining half. Freeze until set.
