Cheesy chicken casserole with broccoli and rice all covered in a creamy cream of mushroom soup mixture. This easy casserole is easy to prepare and can easily be made ahead of time. It is creamy and cheesy for an easy dinner served with your favorite vegetables and bread or rolls. You can easily prepare this casserole ahead of time by preparing the casserole up until baking. You can keep it refrigerated for up to 203 days, or freeze it for up to a month.

Cooked diced chicken is used, you can either cook chicken and dice it, or a rotisery chicken or precooked bagged chicken will work for this. Mix the chicken with cooked broccoli florets, cooked rice, a can of cream of mushroom soup and milk together in a large greased baking dish. Sprinkle with the shredded cheddar cheese and bake until everything is heated through and the cheese has melted.

Ingredients
  

  • 1 pound cooked and diced chicken
  • 12 oz. frozen broccoli florets
  • 2 cups cooked rice
  • 1 ( 10 oz.) can cream of mushroom soup
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. Cook broccoli florets according to package directions. In a large greased baking dish, combine cooked diced chicken, broccoli florets, cooked rice, cream of mushroom soup and milk.
  • Sprinkle shredded cheddar cheese on top and bake for 35-40 minutes.
