Cheddar cheese and crumbled bacon are added onto the casserole and baked uncovered until the cheese has fully melted. This casserole is slightly spicy seasoned with paprika and hot sauce. But you can remove them for a more family friendly casserole.
Chicken and Potato Casserole
Ingredients
- 2 pounds russet potatoes, cubed
- 2 tablespoons olive oil
- 2 teaspoons hot sauce
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 pound chicken, cooked and diced
- 2 cups shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
Instructions
- Preheat oven to 400 F. Cut potatoes into 1-inch cubes and spread out into a large baking dish. Mix with olive oil, hot sauce, cooked chicken, salt, pepper, garlic powder and paprika.
- Cover with foil and bake for 40-45 minutes. Uncover and top with cheese and bacon. Bake uncovered for another 15-20 minutes.
