Cheesy and creamy mashed potatoes with corn, this easy side dish makes a delicious country side dish. This dish combines creamy smooth mashed potatoes with a cheesy corn dish. You can make this easy side dish to go along with almost any dinner, it goes great with a chicken or beef dinner. You can even add in some cooked diced bacon into the mashed potatoes.

The creamy mashed potatoes are made by boiling potatoes in a large saucepan over medium heat. After the potatoes are fork tender, drain them and mash them with butter, milk, salt and pepper. There are two ways that you can mash these potatoes, the first way is to use a hand mixer. Using a mixer to mash the potatoes will make them smoother and more creamy. But you can also use a potato masher to mash them, until they are your desired consistency. Once the potatoes are mashed and seasoned, using a spatula fold in the shredded cheddar cheese and drained corn until the cheese is melted.

Cheesy Mashed Potatoes and Corn

Ingredients
  

  • 2 pounds russet potatoes, peeled and diced
  • 1/2 cup butter
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 ( 14 oz.) can corn, drained

Instructions
 

  • Peel and dice potatoes into 1-inch pieces and place into a large saucepan. Cover with water and bring to a boil over medium heat. Let cook until potatoes are fork tender.
  • Drain and place potatoes into a large bowl along with butter, milk, salt and pepper. Mash with either a hand mixer or a potato masher until smooth. Fold in shredded cheddar cheese and drained corn.
