Cheesy baked rice makes the perfect simple side dish using ingredients that you may already have. Cooked rice is mixed with eggs and milk and covered with cheddar cheese. It is so simple to prepare by using precooked or leftover rice for this dish. This baked rice goes great as a side to go along with chicken. It makes a great side dish, but can easily be made into a main dish by adding in some vegetables and chicken.

This dish is started with cooked rice, you can either cook the rice your self or use a bag of minute rice for this. Or this dish is great for leftover rice as well. Mix the rice with eggs, milk, salt, pepper and paprika to season. Spread the mixture out into a casserole dish. Sprinkle shredded cheddar cheese over the top of the rice and bake until the cheese has fully melted.

Cheesy Baked Rice

Ingredients
  

  • 4 cups cooked rice
  • 2 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon paprika
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 400 F. In a large bowl, combine cooked rice with eggs, milk, salt, pepper and paprika.
  • Spread rice mixture out into a greased baking dish. Sprinkle shredded cheddar cheese over rice and bake for 20-25 minutes.
