Cheesy tater tot casserole with a spicy homemade chili all topped with crispy tater tots and shredded cheddar cheese. This casserole is great to enjoy on colder fall days served warm with a slice of cornbread and your favorite vegetables. The homemade chili is so quick and easy to make with crushed tomatoes and kidney beans. You can have this chili ready in less than 30 minutes. After the chili is made it is topped with frozen tater tots and cheese and baked until the tater tots are crispy and the cheese is melted.

The homemade chili is started by browning ground beef in a large saucepan, breaking the meat up with a spatula as it cooks. Drain the grease from the beef and add in crushed tomatoes, diced tomatoes, beans, garlic and seasonings. Let the chili mixture simmer over medium heat for about 10-15 minutes, until everything is heated through and thick. Spread the chili out into a large greased baking dish. Spread frozen tater tots evenly over the chili in one single layer. Sprinkle shredded cheddar cheese on top and bake until the tater tots are crispy and the cheese has fully melted.

Cheesy Chili Tater Tot Casserole

Ingredients
  

  • 1 pound ground beef
  • 1 ( 28 oz.) can crushed tomatoes
  • 1 ( 15 oz.) can diced tomatoes, undrained
  • 1 ( 15 oz.) can kidney beans, drained
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 ( 36 oz.) bag frozen tater tots
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. Brown ground beef in a large saucepan over medium heat, breaking it up with a spatula as it cooks. Drain grease and return meat to skillet.
  • Add in crushed tomatoes, diced tomatoes, kidney beans, salt, pepper, cumin and chili powder. Let mixture simmer over medium heat for another 10-15 minutes. Spread chili mixture out into a large greased baking dish.
  • Spread tater tots over the chili in one single layer. Sprinkle shredded cheddar cheese over tater tots. Bake for 40-45 minutes.
