Tender brussels sprouts covered with a creamy cheesy parmesan heavy cream sauce. Topped with shredded mozzarella cheese and crispy bacon bits. This is the perfect casserole to make as a side dish for any dinner, or as an Easter side dish. This side dish is a delicious holiday casserole that is great to have anytime of the year, but I especially enjoy it for Easter dinner. Two types of cheeses are used for this casserole, grated parmesan cheese is used in the sauce. Then it is topped off with shredded mozzarella cheese.

Before the brussels sprouts are baked, they are boiled until they are tender. To make the creamy heavy cream parmesan sauce, butter is melted in a medium saucepan. Cook minced garlic in the butter until the garlic is fragrant. Add flour and cook it for a minute to brown, this is what will create the roux that will help thicken the sauce. Pour in heavy cream, grated parmesan cheese, salt and pepper. Continue to cook the sauce, while whisking constantly until the sauce has thickened. Mix the sauce with the cooked brussels sprouts. Top with shredded mozzarella cheese and bacon bits, or you could also use cooked and crumbled bacon instead. Bake until the cheese has melted and the brussels sprouts are fork tender.

Cheesy Bacon Brussels Sprouts Casserole

Ingredients
  

  • 2 pounds fresh brussels sprouts
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup bacon bits, or 3 slices cooked and crumbled bacon

Instructions
 

  • Preheat oven to 350 F. Cut the ends off of the brussels sprouts and place them into a large saucepan. Cover with water and bring to a boil over medium heat. Let cook for about 5-10 minutes, until tender.
  • Drain and place brussels sprouts into a round baking dish. In a medium saucepan over medium heat, melt butter. Cook minced garlic until fragrant. Add in flour and cook for a minute to brown.
  • Add in heavy cream, grated parmesan cheese, salt and pepper. Let cook while whisking constantly, until the sauce has thickened.
  • Mix sauce with brussels sprouts in the baking dish. Top with shredded mozzarella cheese and sprinkle with bacon bits. Bake for 40-50 minutes.
