Soft and chewy peanut butter cookies filled with butterscotch baking chips, and rolled in a mixture of cinnamon and sugar. The cinnamon sugar mixture gives these easy cookies a delicious snickerdoodle flavor that everyone will love. The cookie dough is made quick and easy by starting with a box of cake mix. Everyone will love these chewy cookies for any occasion.

The cookie dough is made by mixing cake mix with peanut butter, eggs, and vegetable oil until smooth. Butterscotch baking chips are then folded into the cookie dough. Roll the cookie dough into balls, and roll into a mixture of granulated sugar and ground cinnamon. Place the cookies onto a large ungreased baking sheet. Bake until the cookies are fully cooked through.

Ingredients
  

  • 1 ( 15 oz.) box white cake mix
  • 1/2 cup peanut butter
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup butterscotch baking chips
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, mix together cake mix, peanut butter, eggs, and vegetable oil until smooth. Fold in the butterscotch baking chips.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll into the cinnamon sugar mixture. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
