Soft and chewy chocolate brownie cups filled with delicious butterscotch baking chips. These easy chewy brownie cups make the perfect easy treat to bake for just about any holiday or occasion. Everyone will love the delicious chocolate and butterscotch flavors in these cups.

The brownie batter is made like a classic brownie batter, except for the addition of butterscotch baking chips folded into the batter. Evenly divide the batter between a paper lined muffin pan. Bake until each brownie cup comes out clean with a toothpick.

Butterscotch Brownie Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch baking chips

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in the eggs, melted butter and vanilla extract, and mix until smooth.
  • Fold in the butterscotch baking chips. Evenly divide the batter between the paper cups. Bake for 15-20 minutes.
