Blueberry Biscuits

Sweet and fluffy homemade biscuits. These fluffy biscuits are made with fresh blueberries mixed into the dough. They make the perfect sweet breakfast or brunch treat. The blueberries add sweetness to your biscuits. These biscuits are perfect served with butter or jelly, or they taste great eaten by themselves.
To start the biscuit dough, it is best if you start with cold ingredients. You can even place your mixing bowl in the fridge for a few minutes as well. All of the dry ingredients are whisked together in a large mixing bowl, then cold cubed butter is cut into the mixture using either a pastry blender or two knives. Once the butter is fully mixed into the dry ingredients it should be crumbly. Pour in milk and mix until a thick dough forms. Fold in blueberries, and turn dough out onto a floured surface. Pat dough dough into a rectangle. Cut out biscuits and place onto a large greased baking sheet. Bake until the tops are golden browned.

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon salt
  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 8 tablespoons butter, cubed
  • 1 cup milk
  • 1 cup fresh blueberries

Instructions
 

  • Preheat oven to 400 F. In a large bowl, whisk together flour, sugar, salt, baking powder, and baking soda. Add in butter using a pastry blender, until mixture resembles course crumbs.
  • Pour in milk, mix until a dough forms. Fold in blueberries. Fold dough out onto a floured surface, folding it over itself a couple of times. Cut out biscuits and place onto a large greased baking sheet. Bake for 15-20 minutes.
