Cheesy spicy beef and rice casserole with diced tomatoes and corn. This meal is easy to prepare with ingredients that you may already have on hand. This casserole is made similar to goulash, except instead of using pasta, rice is used. This casserole is slightly spicy with hot sauce and seasoned with chili powder. Canned corn and diced tomatoes are also added to the casserole. It makes a great easy dinner served with tortilla chips.

Ground beef is used as the base for this meal, brown the beef in a large skillet, breaking it up as it cooks until the meat is no longer pink. Drain the grease from the beef and add in the seasonings, salsa, diced tomatoes along with the juices and a can of drained corn. If you would like a less spicy casserole, you can substitute tomato sauce for the hot sauce and leave the chili powder out. Let the mixture cook for a few more minutes to let it heat through. Mix the beef mixture with cooked rice and spread it into a greased baking dish. Sprinkle shredded cheddar cheese on top and bake until the cheese has melted.

Ingredients
  

  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 cup salsa
  • 1 ( 15 oz.) can diced tomatoes, undrained
  • 1 ( 15 oz.) can corn, drained
  • 2 cups cooked rice
  • 1 1/2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. Brown ground beef in a large skillet over medium heat, breaking it up with a spatula until it is no longer pink. Drain grease and return meat to skillet.
  • Add in salt, pepper, garlic powder, chili powder, diced tomatoes and drained corn. Let cook for another 5 minutes to heat through. Mix with cooked rice in a large greased baking dish.
  • Sprinkle shredded cheddar cheese on top and bake for 35-40 minutes.
