I made crock-pot barbecue chicken earlier in the week. For the first night I made barbecue chicken sandwiches, but with the leftovers I wanted to use the meat for something else. These BBQ chicken quesadillas are a great way to use up the leftover barbecue chicken meat. They go great in a tortilla with sliced red onion and cheesy cheddar cheese. Serve with guacamole or more barbecue sauce for a quick weeknight dinner using up your leftovers.
These quesadillas are pretty easy to prepare with the leftover chicken. Evenly divide the chicken between four of the tortillas and top with slices of red onion and shredded cheddar cheese. Cover with the remaining tortilla on top. Grease a large skillet over medium heat and and place the quesadillas on it and let cook until lightly browned. Flip and cook the other side until it is lightly browned and the cheese has melted.
BBQ Chicken Quesadillas
Ingredients
- 8 flour tortillas
- 1 1/2 cups leftover BBQ chicken
- 1 small red onion, sliced
- 1 cup shredded cheddar cheese
Instructions
- Lay four tortillas flat and layer with BBQ chicken, sliced onions and shredded cheese. Top with the remaining tortilla.
- Heat a large greased skillet over medium heat. Cook quesadillas until browned on both sides.
