Baked Mashed Potato Balls

Crispy and cheesy mashed potato balls using leftover mashed potatoes. This tasty appetizer is a great way to use up some leftover mashed potatoes. The bites are filled with cheese and bacon, covered with a crispy breadcrumb coating. They are baked until golden browned. Make these tasty bites for a quick appetizer, a game day, or just to use up some leftovers.

Leftover mashed potatoes are mixed with cheese, bacon, and egg, and 1/2 cup breadcrumbs. Form the mixture into bite-sized balls and set aside. Place the remaining breadcrumbs into a shallow dish, fully coat each mashed potato ball in the breadcrumbs. Bake until lightly browned.

Ingredients
  

  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked and crumbled bacon
  • 1 large egg
  • 1 1/2 cups breadcrumbs, divided

Instructions
 

  • Preheat oven to 400 F. In a large bowl, combine mashed potatoes, cheese, bacon, egg, and 1/2 cup breadcrumbs. Form mixture into balls and set onto a plate. Place the remaining breadcrumbs into another shallow dish.
  • Roll the mashed potato balls into the breadcrumbs, place onto a larger greased baking sheet. Bake for 15-20 minutes.
