- 2 cups leftover mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked and crumbled bacon
- 1 large egg
- 1 1/2 cups breadcrumbs, divided
Instructions
- Preheat oven to 400 F. In a large bowl, combine mashed potatoes, cheese, bacon, egg, and 1/2 cup breadcrumbs. Form mixture into balls and set onto a plate. Place the remaining breadcrumbs into another shallow dish.
- Roll the mashed potato balls into the breadcrumbs, place onto a larger greased baking sheet. Bake for 15-20 minutes.
