Avocado Corn Salad

Quick and easy salad that goes great for any of your favorite summer meals. Corn, avocados, and tomatoes are combined to create a light and delicious salad that makes the perfect side dish or potluck dish for a picnic. You can easily make this salad ahead of time and store it in the refrigerator until you are ready to serve, or you up to a couple of days.

All you need to do to create this salad is combine all of the ingredients into a bowl. Corn, avocados, cherry tomatoes, diced red onion, olive oil, and lime juice are all combined together. Cover and refrigerate the salad for up to a couple of days, or until you are ready to serve.

Ingredients
  

  • 1 ( 15 oz.) can corn, drained
  • 2 small avocados, peeled and diced
  • 1 pint cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 4 tablespoons olive oil
  • 1 tablespoon lime juice

Instructions
 

  • In a medium bowl, combine all of the ingredients together. Cover and refrigerate until serving.
