Easy and creamy spicy potato salad with bell peppers and seasoned with Cajun seasoning. This creamy potato salad makes a delicious summer side dish that goes perfectly with any grilled dish or other summer meal. This potato salad would even be great for potlucks or picnics. This salad is great to make ahead, you can make this dish ahead of time a couple of days before you need it.

Russet potatoes are peeled and cubed, then boiled until the potatoes are fork tender. Drain the potatoes and rinse with cold water to stop the cooking process. Place into a large bowl and mix with mayonnaise, onion, pepper, boiled eggs, mustard, and seasoned with Cajun seasoning. The Cajun seasoning makes this potato salad slightly spicy. Cover and refrigerate until you are ready to serve.

Ingredients
  

  • 2 pounds russet potatoes, peeled, cubed
  • 1 cup mayonnaise
  • 1/2 cup diced onion
  • 1 bell pepper, diced
  • 4 hard boiled eggs, chopped
  • 2 tablespoons mustard
  • 2 teaspoons Cajun seasoning

Instructions
 

  • Place potatoes into a large saucepan over medium heat, cover with water. Bring to a boil and let simmer until the potatoes are fork tender. Drain and place into a large bowl.
  • Mix the potatoes with the remaning ingredients. Cover and refrigerate until you are ready to serve.
