Cheesy chicken casserole with rice, all topped with a crispy topping of buttery Ritz crackers. This warm and comforting casserole is so quick and easy to make. You can even make this dish ahead of time and freeze it until you are ready to eat it. This meal is so easy to make, everything is mixed together in a large baking dish and baked until all of the ingredients are heated through. Serve with bread and your favorite vegetables for a quick and easy meal.

This meal is great for using up leftover chicken or even a rotissery chicken will work great for this. Mix the cooked chicken with cooked rice and a can of cream of mushroom soup. You can also use cream of chicken or cream of celery soup instead if you would like. Sprinkle shredded cheddar cheese on top of the casserole and topped with crushed buttery crackers. Bake until the cheese has melted and the crackers are crispy.

Ingredients
  

  • 1 pound chicken, cooked and diced
  • 2 cups cooked rice
  • 1 ( 14 oz.) can cream of mushroom soup
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • 1 cup crushed Ritz crackers

Instructions
 

  • Preheat oven to 350 F. In a large greased baking dish, combine chicken, rice, soup and milk. Sprinkle with shredded cheddar cheese and crushed crackers.
  • Bake for 40-45 minutes.
