The vanilla cake and oreo cookies go perfectly together for this delicous cake. You can also freeze the cake layers ahead of time for up to a month before frosting and decorationg.
The cake batter is made similar to a classic vanilla layered cake, except with the addition of crushed oreo cookies folded into the batter. Bake the cakes in 2 round 9-inch cake pans until they come out clean in the center. Let the cool completely before freezing or frosting. You can wrap these cakes in foil tightly and freeze them for up to a month. I will usually freeze the cake layers for at least a day or two before decorating, because it makes the cakes eaiser to work with. For the cookies and cream frosting, softened butter and powered sugar are beat together until fluffy. Along with vanilla extract and enough milk needed to thin the frosting. Crushed oreo cookies are folded into the frosting. Frost the cooled cake and decorate with more oreos.
Cookies and Cream Cake
Ingredients
- 3 cups all-purpose flour
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 cup butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 14 oreos, crushed
Ingredients for Cookies and Cream Frosting
- 1 cup butter, softened
- 4-5 cups powdered sugar
- 1 teaspoon vanilla extract
- 2-4 tablespoons milk
- 10 oreos, crushed
Instructions
- Preheat oven to 350 F. Line 2 9-inch round cake pans with parchment paper and grease with non-stick cooking spray. In a medium bowl, whisk together flour, salt, baking powder and baking soda.
- In a large bowl with either a hand or a stand mixer, beat softened butter with granulated sugar until fluffy. Add in eggs, milk and vanilla extract, beat until smooth.
- In three seperate batches, add in flour mixture, beating after each addition until fully incorporated. Fold in crushed oreos.
- Divide cake batter between the prepared cake pans. Bake for 30-35 minutes. Let cool completely.
- For the cookies and cream frosting, beat softened butter and powdered sugar together until fluffy. Add in vanilla extract and milk as needed to thin. Fold in crushed oreos.
- Frost cake completely and decorate with oreos.
