Spring is almost here, which means that jelly beans are everywhere. I love to use jelly beans for baking, because there are so many desserts that you can create with them. One of my favorite desserts to make with jelly beans is creamy white chocolate fudge. This fudge is so quick and easy to make, there is no baking required at all, just a microwave. This is the perfect candy for storing in the freezer, it will freeze well for up to two months. So you can enjoy this tasty treat all spring long.
The fudge is a creamy no-bake white chocolate fudge that is made using the microwave. Place the white chocolate chips into a large microwaveable bowl and melt it in the microwave. Melt it in 30 second intervals, until the chocolate is completely melted and smooth. Pour in the sweetened condensed milk and vanilla extract, stirring until smooth and creamy. Fold in jelly beans and then spread the candy mixture out into a greased square baking dish. Refrigerate until the fudge has completely set. Cut into squares and store the fudge in an airtight container in the freezer for up to two months or until ready to serve.
