Zucchini Cornbread

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup milk
  • 1 large egg
  • 1/4 cup diced onion
  • 1 zucchini, shredded
  • 1/2 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 400 F. In a large bowl, whisk together flour, cornmeal, sugar, salt, and baking powder. Add in milk, egg, onion, zucchini, and cheese. Whisk until smooth.
  • Pour mixture into a greased round 9-inch pie dish. Bake for 25-30 minutes.
