White Chocolate Chip Gingerbread Cookies

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cinnamon, ginger, and cloves. In a large bowl, combine butter, granulated sugar, brown sugar, and molasses. Mix until fluffy.
  2. Add in egg and vanilla extract, mix until smooth. Add in the flour mixture, and mix until a thick dough forms. Fold in the white chocolate chips.
  3. Roll the cookie dough into balls, and place at least 2-inches apart onto ungreased baking sheets. Bake for 10-12 minutes.
