St. Patrick's Day White Chocolate Chip Sugar Cookie Cups

Ingredients
  

  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • green food coloring
  • 1 cup white chocolate chips

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in the egg and vanilla extract and mix until smooth.
  2. Add in the flour mixture, and mix until it is fully combined. Add in the food coloring and mix until it is fully green. Fold in the white chocolate chips.
  3. Evenly divide the cookie dough between the paper liners. Bake for 12-15 minutes.
