St. Patrick's Day Blondie Cups

Ingredients
  

  • 2 large eggs
  • 1 cup butter, melted
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • green food coloring

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together eggs, melted butter, brown sugar, and vanilla extract until smooth.
  2. Add in the flour, salt, and baking powder, and mix until smooth. Add in the food coloring. Evenly divide the batter between the paper liners. Bake for 12-15 minutes.
