Rolo Stuffed Fourth of July Peanut Butter Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup Fourth of July sprinkles
  • Rolos

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the sprinkles. Roll the cookie dough into balls, and place one Rolo on each cookie dough. Roll into a ball, covering the chocolate completely.
  • Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
