Rolo Stuffed Cake Mix Mint White Chocolate Chip Cookies

  • 1 ( 15 oz.) box yellow cake mix
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup white chocolate chips
  • Rolos

Method
 

  1. Preheat the oven to 350 F. In a large bowl, mix together cake mix, eggs, vegetable oil and mint extract until smooth. Add in the food coloring until it is fully green. Fold in the white chocolate chips.
  2. Place the cookie dough onto a large ungreased baking sheet at least 2-inches apart. Place one Rolo on each cookie dough, and cover with more dough. Bake for 10-12 minutes.
