Reese's Peanut Butter Cup Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mini Reese's peanut butter cups
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with peanut butter and granulated sugar until fluffy.
  • Add in egg and vanilla extract, and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Fold in the mini Reese's peanut butter cups.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Roll the cookie dough into balls, and roll each ball into the cinnamon sugar mixture.
  • Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
