Ranch Potato Salad

Ingredients
  

  • 2 pounds russet potatoes, peeled and cubed
  • 2 large hard boiled eggs, chopped
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1 cup ranch dressing
  • 1/2 cup mayonnaise
  • 1 teaspoon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 2 teaspoons dried parsley

Instructions
 

  • Place potatoes into a large saucpan over medium heat. Cover with water. Bring to a boil, simmer until fork tender. Drain and place into a large bowl.
  • In a medium bowl, combine mayonnaise, ranch dressing, mustard, salt, pepper, garlic powder, paprika, and dried parsley.
  • Mix potatoes with eggs, onion, celery, and mayonnaise mixture. Cover and refrigerate until serving.
