  • 8 oz. cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Oreo cookies

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners and place one Oreo cookie in each cup.
  2. In a large bowl, mix cream cheese with pumpkin puree, granulated sugar, pumpkin pie spice, vanilla extract, and eggs until smooth.
  3. Evenly divide the cheesecake batter over the Oreo cookies. Bake for 25-30 minutes.
