Pumpkin Oreo Cheesecake Cups

Ingredients
  

  • 8 oz. cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Oreo cookies

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners and place one Oreo cookie in each cup.
  • In a large bowl, mix cream cheese with pumpkin puree, granulated sugar, pumpkin pie spice, vanilla extract, and eggs until smooth.
  • Evenly divide the cheesecake batter over the Oreo cookies. Bake for 25-30 minutes.
