Pepper Jack Cornbread Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 large egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1/2 cup shredded pepper jack cheese

Instructions
 

  • Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, cornmeal, sugar, salt, and baking powder. Add in the egg, milk, and vegetable oil and mix until smooth.
  • Evenly divide the batter between the paper liners. Bake for 15-20 minutes.
