Pepper Jack Cornbread Cups

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 large egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1/2 cup shredded pepper jack cheese

Method
 

  1. Preheat the oven to 350 F. Line a 12 cup muffin pan with paper liners. In a large bowl, whisk together flour, cornmeal, sugar, salt, and baking powder. Add in the egg, milk, and vegetable oil and mix until smooth.
  2. Evenly divide the batter between the paper liners. Bake for 15-20 minutes.
