Peanut Butter Chocolate Chip Pudding Crinkle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1/2 cup powdered sugar

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, combine butter with peanut butter, granulated sugar, and brown sugar until fluffy.
  • Add in the egg and vanilla extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined. Fold in the chocolate chips. Place the powdered sugar into a shallow dish.
  • Roll the cookie dough into balls, and roll each one into the powdered sugar. Place the cookies onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
