Pasta e Fagioli

Ingredients
  

  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 2 large carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • 2 ( 15 oz.) cans tomato sauce
  • 1 ( 14 oz.) can diced tomatoes, undrained
  • 1 ( 15 oz.) can kidney beans, drained
  • 1 ( 15 oz.) can white beans, drained
  • 1 cup ditaliani pasta
  • 1 tablespoon Italian seasoning

Method
 

  1. Heat olive oil in large saucepan over medium heat. Cook onion, carrots ,celery, and garlic in the oil until softened.
  2. Pour in vegetable broth, tomato sauce, and diced tomatoes. Bring to a simmer, add in kidney beans, white beans, pasta, and seasoning. Cook until the pasta is cooked through, 8-10 minutes.
