Oatmeal Raisin Pudding Cookies

Ingredients
  

  • 1 cup all-purpose flour
  • 1 1/2 cups quick oats
  • 1 ( 3 oz.) box vanilla pudding mix
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, oats, pudding mix, salt, and baking soda. In a large bowl, mix together butter and both sugars until fluffy. Add in egg and vanilla extract and mix until smooth.
  2. Add in the flour mixture and mix until it is fully combined. Fold in the raisins. Roll the cookie dough into balls and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
