Oatmeal Brookies

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 2 cups quick oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350 F. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda.
  • Add in eggs, melted butter, and vanilla extract. Whisk until smooth. Pour the brownie batter into a greased 8-inch square baking dish.
  • In a medium bowl, whisk together flour, oats, salt, and baking soda. In a large bowl, combine butter with both sugars until fluffy. Add in the egg and vanilla extract, and mix until smooth.
  • Add in the flour mixture, and mix until the flour is fully combined. Evenly spread the cookie dough over the brownie batter. Bake for 25-30 minutes.
