Place the chocolate chips in a microwave-safe bowl, and heat in the microwave until it is fully melted and smooth. Cut the nutter butter cookies in half.
Dip one half into the melted chocolate, and place next to the other half, in a heart shape. Let sit until the chocolate sets. Fully coat each nutter butter heart into the melted chocolate, covering it fully.
Place the cookies onto a plate, and decorate with sprinkles. Let sit until the chocolate has completely set.
