Monster Eye Sugar Cookie Truffles

Ingredients
  

  • 2 cups sugar cookies, crushed
  • 8 oz. cream cheese, softened
  • 12 oz. white chocolate chips
  • green food coloring
  • candy eyes

Instructions
 

  • In a large bowl, mix cookies with cream cheese until combined. Roll the mixture into balls and set onto a plate. Freeze for 20 minutes. Place chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth.
  • Stir in food coloring. Coat each truffle in the chocolate and set onto a plate. Decorate with candy eyes. Let sit until it is completely set.
