Place the flour into a microwave-safe bowl, and heat in the microwave for about 40-seconds. In a large bowl, combine butter and sugar until fluffy. Add in the peppermint extract, and mix until smooth.
Add in the flour, and mix until it is fully combined. Add in the green food coloring and mix until it is fully green. Fold in the chocolate chips.
Roll the cookie dough into balls, and place them onto plates. Refrigerate for at least 20 minutes. Place the chocolate chips in a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring until it is fully melted and smooth.
Fully coat each cookie dough truffle into the melted chocolate. Set back onto plates. Let sit until the chocolate has fully set.
