Mint Chocolate Chip Brookie Ice Cream Cones

Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon mint extract
  • green food coloring
  • 1 cup chocolate chips
  • ice cream cones

Method
 

  1. Preheat the oven to 350 F. Place ice cream cones onto a large baking sheet. In a large bowl, whisk together flour, sugar, cocoa powder, salt, and baking soda. Add in melted butter, eggs, and vanilla extract and mix until smooth.
  2. In a medium bowl, whisk together flour, salt, and baking soda. In a large bowl, combine butter with sugar until fluffy. Add in egg and mint extract, and mix until smooth. Add in the flour mixture, mix until it is fully combined.
  3. Add in the green food coloring, and mix until it is fully green. Fold in the chocolate chips. Evenly divide the brownie batter between the ice cream cones.
  4. Evenly place the cookie dough over the brownie batter. Bake for 20-25 minutes.
