Meatloaf Mashed Potato Casserole

Ingredients
  

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried rosemary
  • 1 large egg
  • 1/2 cup milk
  • 2 tablespoons ketchup
  • 1 tablespoon worcestershire sauce
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 350 F. In a large bowl, combine ground beef, breadcrumbs, seasonings, egg, milk, ketchup, and worcestershire sauce. Press mixture out into a greased baking dish. Bake for 40-50 minutes.
  • Place potatoes into a large saucepan, cover with water and bring to a boil over medium heat. Simmer until potatoes are fork tender. Drain. Mash potatoes with butter, salt, and pepper. Evenly spread potatoes over meatloaf. Sprinkle with shredded cheddar cheese. Bake for another 20-25 minutes.
