Place flour into a microwave-safe bowl, and heat in the microwave for 40 seconds. In a large bowl, mix together butter and sugar until fluffy. Add in vanilla extract and mix until smooth.
Add in the heated flour until combined. Divide the cookie dough into three bowls, Mix one with purple food coloring, one with yellow and one with green.
Take a small amount of each cookie dough and roll together into balls. Set onto a plate, and place white chocolate chips into a microwave-safe bowl.
Heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth. Coat each cookie dough truffle in the chocolate and set onto a plate. Let sit until set.
