Mac and Cheese Cups

Ingredients
  

  • 8 oz. elbow noodles
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon paprika

Method
 

  1. Preheat oven to 400 F. Cook pasta according to package directions. Drain and place into a large bowl. In a medium saucepan over medium heat, melt butter.
  2. Whisk in flour and cook for a minute to brown. Pour in milk, cheese, salt, pepper, and paprika. Whisk constantly until the cheese has fully melted and the sauce has thickened. Mix sauce with pasta.
  3. Evenly divide mac and cheese between 12 greased muffin tins. Bake for 15-20 minutes.
