Loaded Red Potato Casserole

Ingredients
  

  • 2 pounds red potatoes, halved
  • 1/4 cup butter
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon

Instructions
 

  • Preheat oven to 350 F. Place red potatoes into a saucepan over medium heat, cover with water, let simmer until fork tender. Drain and mash potatoes with butter, sour cream, salt, and pepper.
  • Spread potatoes into a greased baking dish. Top with cheese and bacon. Bake for 20-25 minutes.
