Preheat oven to 350 F. Roll out one pie crust and press it into a 9-inch pie dish. In a large skillet over medium heat, brown ground beef until it is no longer pink, breaking it up as it cooks with a spatula.
Drain grease and return meat to skillet. Stir in ketchup, mustard, sliced pickles, salt and pepper. Continue to cook mixture over medium heat for 5 minutes to heat through.
Place meat mixture in the pie crust, and sprinkle shredded cheddar cheese over mixture. Roll the remaining pie crust out and cut it into a jack-o-lantern face. Place the pie dough over the cheese, sealing the edges. Bake for 35-40 minutes.
