In a large bowl, using a mixer, beat softened butter with cream cheese until smooth. Gradually add in powdered sugar and peppermint extract until a thick dough forms.
Roll mixture into bite-sized balls. Set onto plates and refrigerate for at least 30 minutes. Place chocolate chips in a microwave safe bowl. Heat in the microwave in 30 second intervals, stirring until fully melted and smooth.
Dip each mint into the chocolate, coating it fully. Set back onto plates. Refrigerate until the chocolate has set.
