Halloween Peanut Butter Pudding Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 teaspoon vanilla extract
  • purple and green food coloring
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat the oven to 350 F. In a medium bowl, whisk together flour, pudding mix, salt, and baking soda. In a large bowl, mix together butter, peanut butter, brown sugar, and granulated sugar until fluffy.
  • Add in egg and vanilla extract and mix until smooth. Add in the flour mixture, and mix until it is fully combined. Divide the cookie dough into two bowls, and mix one with purple food coloring, and one with green food coloring.
  • In a shallow dish, combine granulated sugar and ground cinnamon. Take a small amount of each cookie dough and roll together into balls. Roll each one into the cinnamon sugar and place onto a large ungreased baking sheet at least 2-inches apart. Bake for 10-12 minutes.
