Divide the cookie dough into three bowls. Mix one with purple food coloring, one with orange, and one with green. Take a small amount of each cookie dough and roll together into balls.
Place chocolate chips into a microwave-safe bowl, and heat in the microwave in 30-second intervals, stirring well until it is fully melted and smooth. Fully coat each truffle in the chocolate, set onto a plate and let sit until it is completely set.
