In a large bowl, combine softened butter with peanut butter and powdered sugar. Mix until a thick dough forms.
Roll the peanut butter balls into bite-sized balls. Place onto plates and refrigerate for at least 20 minutes.
Place chocolate chips into a microwave-safe bowl, and heat in 30 second intervals, stirring until fully melted and smooth. Add in green food coloring, stir until fully green.
Dip each peanut butter ball into the melted chocolate, and set onto plates. Top with sprinkles. Refrigerate for at least 20 minutes.
