Gingerbread Snickerdoodle Cookies

Ingredients
  

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup molasses
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Method
 

  1. Preheat the oven to 350 F. In a medium bowl, whisk together flour, salt, baking soda, cream of tartar, cinnamon, ginger, and cloves. In a large bowl, combine butter with both sugars, and molasses, mix until it is fluffy.
  2. Add in egg and vanilla extract, mix until smooth. Add in the flour mixture, and mix until it is fully combined.
  3. Roll the cookie dough into balls, and roll into the cinnamon sugar mixture. Place on a large ungreased baking sheet, at least 2-inches apart. Bake for 10-12 minutes.
